Ingredients
- 1 pound ground turkey, lean
- About 12 large butter lettuce leaves, washed and dried (or Bibb or Romaine lettuce)

- 1 medium carrot, grated or finely diced
- 2 green onions, thinly sliced (for garnish)

Instructions
- Prepare the hoisin sauce: In a small bowl, whisk together hoisin sauce, soy sauce, rice vinegar, sesame oil, honey, and sriracha (if using). Set aside.

- Cook the ground turkey: Heat oil in a large skillet over medium-high heat. Add chopped onion and sauté for 2-3 minutes until translucent. Stir in garlic and ginger, cooking until fragrant (about 30 seconds). Add ground turkey, breaking it up with a spatula. Cook until no longer pink and slightly browned, about 5-7 minutes. - Add carrots and sauce: Stir in grated carrot, then pour hoisin sauce mixture over the turkey. Toss to coat evenly and cook for another 2 minutes until heated through and glossy. Adjust seasoning if needed.
- Assemble the wraps: Spoon generous amounts of turkey mixture into each butter lettuce leaf. Sprinkle with sliced green onions, chopped nuts, and fresh cilantro if desired. Serve with lime wedges.
