- 1/2 cup (120 ml) hot coffee
- 8 oz (225 g) semi-sweet chocolate, chopped
- 1 cup (240 ml) heavy cream
- 2 tablespoons unsalted butter, softened
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour your cake pans or line them with parchment paper.
- In a medium bowl, sift together the flour, cocoa powder, baking powder, baking soda, and salt.
- In a large bowl, beat the softened butter and sugar until light and fluffy (about 3 minutes).
- Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next. Stir in the vanilla extract.
- Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk. Start and end with the dry ingredients. Mix until just combined.
- Slowly pour in the hot coffee, mixing gently. The batter will be thin.
- Divide the batter evenly between the prepared pans and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cakes cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.
- Heat the cream in a small saucepan until just simmering. Pour it over the chopped chocolate in a bowl and let sit for 5 minutes. Stir until smooth, then mix in the butter.
- Spread a layer of ganache between the cake layers, then frost the top and sides. Let the ganache set before slicing.
