  • 24 ounces marinara sauce
  • 1 medium zucchini, diced or sliced thinly
  • 1 bell pepper, diced
  • 2 cups fresh spinach, roughly chopped
  • 1 cup ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 medium onion, diced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease your baking dish with olive oil or cooking spray.
  2. Bring a large pot of salted water to boil. Cook the ziti pasta according to package instructions until al dente. Drain and set aside.
  3. In a large skillet, heat olive oil over medium heat. Add diced onion and sauté for 2-3 minutes until softened.
  4. Stir in garlic and cook for another 30 seconds, just until fragrant.
  5. Add zucchini and bell peppers to the skillet. Cook for 5-7 minutes, stirring occasionally, until the veggies are tender.

  9. Sprinkle the remaining mozzarella and Parmesan cheese over the top.
  10. Cover the dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden brown.
