Instructions

  1. Trim excess fat from chicken thighs and cut into roughly 1.5-inch pieces. Pat dry with paper towels.
  2. In a mixing bowl, whisk together bourbon, soy sauce, brown sugar, honey, rice vinegar, minced garlic, and grated ginger. Set aside.
  3. Heat vegetable oil in a large skillet over medium-high heat. Add chicken pieces in a single layer, cooking 4-5 minutes per side until golden brown and cooked through (internal temp 165°F / 74°C). Remove chicken and set aside.
  4. Lower heat to medium and pour the prepared glaze into the skillet. Bring to a simmer, scraping up browned bits. Simmer gently for about 5 minutes until sugar dissolves and sauce starts thickening.
  5. Mix cornstarch with cold water until smooth. Slowly whisk slurry into simmering sauce. Stir constantly until glaze thickens and becomes glossy, about 1-2 minutes.
