  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 1 ½ cups semi-sweet chocolate chunks (270g)
  • ¾ cup chopped nuts, toasted (walnuts or pecans, 90g)

Instructions

  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper or silicone mats.
  2. Toast the nuts in a dry skillet over medium heat, stirring frequently for 4–5 minutes until fragrant and lightly browned. Set aside to cool.
  3. In a large bowl, whisk together the flour, baking soda, and salt. Set aside.
  4. In another large bowl, beat the softened butter, brown sugar, and granulated sugar with an electric mixer at medium speed until light and fluffy, about 3 minutes.
  5. Beat in the eggs one at a time, then stir in the vanilla extract until fully incorporated.
  6. Gradually add the dry ingredients to the wet mixture, mixing on low speed or folding with a spatula just until combined. Avoid overmixing.
  7. Fold in the semi-sweet chocolate chunks and toasted nuts gently.
  8. Using a cookie scoop or tablespoon, drop rounded balls of dough about 2 inches apart on the prepared baking sheets.
  9. Bake for 10–12 minutes, or until edges are golden but centers still look slightly soft.
  10. Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

Do not overmix the dough to keep cookies chewy. Use room temperature ingredients for best texture. Toast nuts to enhance flavor. If dough is too soft, chill for 15 minutes before scooping.
