Description

Chewy, wholesome oatmeal bites studded with tangy strawberries and dipped in a crisp chocolate shell. These easy, no-bake snacks are perfect for lunchboxes, after-school treats, or a sweet pick-me-up any time of day.


Ingredients

  • 2 cups old-fashioned rolled oats
  • 1/2 cup unsweetened shredded coconut
  • 1/3 cup honey or pure maple syrup
  • 1/2 cup natural creamy peanut butter
  • 3/4 cup freeze-dried strawberries, crushed slightly
  • 1/4 cup mini chocolate chips
  • 1 teaspoon pure vanilla extract
  • 1/4 teaspoon sea salt
  • 4 ounces dark chocolate (for dipping), roughly chopped
  • 1 teaspoon coconut oil (optional)

Instructions

  1. Line a baking sheet with parchment or wax paper. Gather all ingredients.
  2. In a large bowl, combine rolled oats, shredded coconut, freeze-dried strawberries, mini chocolate chips, and sea salt. Stir until evenly distributed.
  3. In a microwave-safe bowl, gently warm peanut butter and honey (or maple syrup) for 20–30 seconds until pourable. Stir in vanilla extract.
  4. Pour the wet ingredients over the dry ingredients. Mix until everything is well coated and the mixture clumps together when pressed. Adjust with more peanut butter or honey if too dry, or more oats if too sticky.
  5. Using a small cookie scoop or tablespoon, portion and roll the mixture into 1-inch balls. Place on the lined baking sheet.
  6. Chill the tray in the fridge or freezer for 10–15 minutes until firm.
  7. In a microwave-safe bowl, melt dark chocolate and coconut oil in 20-second bursts, stirring until smooth.
  8. Dip each chilled oat bite halfway into the melted chocolate, then return to the baking sheet. Sprinkle with extra crushed strawberries or flaky salt if desired.
  9. Refrigerate or freeze the dipped bites until the chocolate is set and firm (about 10 minutes).
  10. Store in an airtight container in the fridge for up to a week. Enjoy!

Notes

For gluten-free bites, use certified gluten-free oats. Swap peanut butter for sunflower seed butter for nut-free. Use maple syrup and dairy-free chocolate for vegan. If using fresh strawberries, chop finely and blot dry; eat within 2 days. For a softer texture, pulse half the oats in a food processor. Double dip in chocolate for extra decadence.
