- 1 lb (450 g) ground beef (preferably 80/20 for juiciness)
- 1/4 cup (30 g) breadcrumbs (plain or seasoned)
- 1/4 cup (60 ml) milk (whole or 2%)
- 1 small onion, finely chopped
- 1 large egg, beaten
- 1 tablespoon Worcestershire sauce
- 1 teaspoon garlic powder
- Salt and freshly ground black pepper, to taste
- 2 tablespoons unsalted butter
- 8 oz (225 g) cremini or white mushrooms, sliced
- 2 cloves garlic, minced
- 2 tablespoons all-purpose flour
- 2 cups (480 ml) beef broth
- 1/4 cup (60 ml) sour cream
- 1 teaspoon fresh thyme leaves or 1/2 teaspoon dried thyme
- Salt and pepper, to taste
Instructions
- In a large bowl, combine ground beef, breadcrumbs, milk, finely chopped onion, beaten egg, Worcestershire sauce, garlic powder, salt, and pepper. Mix gently until just combined (about 1-2 minutes).
- Divide the mixture into 4 equal portions and shape each into oval patties about 3/4 inch thick. Chill for 10 minutes if mixture feels too loose.
- Heat a large skillet over medium-high heat and add 1 tablespoon butter or oil. Cook patties for 4-5 minutes per side until browned and cooked through (internal temperature 160°F/71°C). Remove patties and set aside.
- In the same skillet, reduce heat to medium and add 1 tablespoon butter. Add sliced mushrooms and cook for 5-6 minutes until golden and softened.
- Add minced garlic and thyme; cook for another minute until fragrant.
- Sprinkle flour over mushrooms and stir to coat evenly. Cook for 1-2 minutes, stirring constantly.
- Gradually pour in beef broth while stirring to avoid lumps. Simmer for 4-5 minutes until gravy thickens.
- Remove from heat and stir in sour cream until smooth. Adjust seasoning with salt and pepper.
- Return patties to skillet and spoon gravy over them. Warm together on low heat for 2-3 minutes. Serve hot.
Notes
Do not overmix the beef to keep patties tender. Brown patties well for flavor. Use room temperature eggs and milk for better binding. Cook mushrooms thoroughly to avoid watery gravy. Gradually add broth to prevent lumps. Adjust seasoning after adding sour cream. If gravy is too thick, add broth or water; if too thin, simmer longer.
