- 2 cups (250g) all-purpose flour
- 1 tsp baking powder

- 1/2 cup (115g) unsalted butter, softened

- 1 tsp vanilla extract
- 1/2 cup (120ml) milk
- 2 medium apples, peeled, cored, and diced
- 1/4 cup (50g) brown sugar
- 1 tsp ground cinnamon
- 1 tbsp (15g) butter
- 1 cup (120g) powdered sugar
- 2 tbsp (30ml) milk
- 1/4 tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan with non-stick spray or line it with parchment paper.
- In a small saucepan, melt butter over medium heat. Add diced apples, brown sugar, and cinnamon. Cook for about 5–7 minutes, stirring occasionally, until the apples soften and the mixture thickens. Set aside to cool.
- In a large bowl, whisk together the flour, baking powder, cinnamon, and salt.
- In another bowl, beat the softened butter and granulated sugar until light and fluffy, about 2–3 minutes.
- Beat in the eggs, one at a time, followed by the vanilla extract.
- Gradually add the dry ingredients to the wet mixture, alternating with milk. Start and end with the dry ingredients, mixing until just combined. Be careful not to overmix.
- Pour half of the batter into the prepared loaf pan. Spread half of the apple filling on top. Add the remaining batter and finish with the rest of the apple filling. Use a knife to swirl the apple mixture into the batter, creating a marbled effect.
- Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean. Start checking at the 50-minute mark to avoid overbaking.
- Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack.
- In a small bowl, whisk together powdered sugar, milk, and vanilla extract until smooth. Drizzle the icing over the cooled bread.
