Instructions

  1. Preheat your oven to 425°F (220°C). Scrub 4 medium russet potatoes, pat dry, and prick them a few times with a fork to let steam escape. Rub each potato with a little olive oil and sprinkle with coarse salt. Place them on a baking sheet and bake for 45-60 minutes until skins are crisp and insides are soft when pierced with a fork.
  2. While potatoes bake, prepare the chicken mixture. In a bowl, combine 2 cups shredded cooked chicken with 1/2 cup ranch dressing. Add 1/2 teaspoon garlic powder, 1/4 teaspoon smoked paprika, and salt and pepper to taste. Stir well to coat evenly. If your chicken is cold, warm briefly in the microwave for about 30 seconds for easier mixing.
  3. Cook and crumble 6 slices of bacon. You can fry on the stovetop or bake bacon alongside potatoes using a separate tray for about 15-20 minutes at 400°F (200°C). Drain on paper towels to keep it crispy.
  4. Prepare toppings: shred 1 cup sharp cheddar cheese and thinly slice 3 green onions. Have sour cream and butter ready if desired.
  5. Once potatoes are done, let cool for a few minutes. Cut a slit lengthwise down the center, gently fluff the insides with a fork, and add a small pat of butter if desired.
