  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 3 tablespoons (42g) unsalted butter, melted
  • 4 oz (115g) cream cheese, softened
  • 1 cup (120g) powdered sugar
  • 23 tablespoons (30-45ml) milk or cream (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease your 8×8-inch baking dish with butter or non-stick spray.
  2. In a large bowl, combine rolled oats, baking powder, ground cinnamon, brown sugar, and salt. Whisk until evenly blended.
  3. In a separate bowl, whisk together milk, eggs, melted butter, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and gently fold with a spatula until just combined. Do not overmix.
  5. Pour the batter into the prepared baking dish and smooth the top. Sprinkle extra cinnamon mixed with brown sugar over the top and swirl gently with a knife or skewer.
  6. Bake for 35-40 minutes until the oatmeal puffs slightly and edges turn golden brown. A toothpick inserted should come out mostly clean with some moist crumbs.
