- 1 ½ cups (135g) old-fashioned rolled oats
- 1 ½ teaspoons baking powder
- 2 teaspoons ground cinnamon
- ⅓ cup (65g) brown sugar
- ¼ teaspoon salt
- 2 cups (480ml) milk (whole milk preferred, or any dairy/plant-based milk)
- 1 teaspoon vanilla extract
- 2 large eggs
- 3 tablespoons (42g) unsalted butter, melted
- 4 oz (115g) cream cheese, softened
- 1 cup (120g) powdered sugar
- 2–3 tablespoons (30-45ml) milk or cream (for glaze)
Instructions
- Preheat your oven to 350°F (175°C). Grease your 8×8-inch baking dish with butter or non-stick spray.
- In a large bowl, combine rolled oats, baking powder, ground cinnamon, brown sugar, and salt. Whisk until evenly blended.
- In a separate bowl, whisk together milk, eggs, melted butter, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and gently fold with a spatula until just combined. Do not overmix.
- Pour the batter into the prepared baking dish and smooth the top. Sprinkle extra cinnamon mixed with brown sugar over the top and swirl gently with a knife or skewer.
- Bake for 35-40 minutes until the oatmeal puffs slightly and edges turn golden brown. A toothpick inserted should come out mostly clean with some moist crumbs.
- While baking, prepare the cream cheese glaze by beating softened cream cheese with powdered sugar and 2-3 tablespoons milk or cream until smooth and drizzle-able.
- Let the baked oatmeal cool for about 10 minutes, then drizzle the cream cheese glaze generously over the top.
- Serve warm and enjoy.
Notes
If glaze thickens too much, stir in a splash more milk. For a crispier top, broil the oatmeal for 1-2 minutes at the end, watching closely. Use old-fashioned rolled oats for best texture. For gluten-free, use certified gluten-free oats. For dairy-free, substitute butter with coconut oil and cream cheese with a dairy-free alternative.
