  • Salt and pepper to taste (about 1 teaspoon salt and ½ teaspoon pepper)
  • 2 tablespoons olive oil (optional, for browning)
  • 1 medium yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 2 cups chicken broth (480 ml), preferably low-sodium
  • ½ cup heavy cream (120 ml), can substitute with coconut cream for dairy-free
  • 4 ounces cream cheese (115 grams), softened
  • 3 tablespoons all-purpose flour (use gluten-free flour if needed)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary, crushed
  • 1 tablespoon Worcestershire sauce (omit for vegetarian gravy)

Instructions

  1. Pat the chicken breasts dry with paper towels and season generously with salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat. Brown chicken breasts for 2-3 minutes on each side until golden. Transfer to crockpot.
  3. In the same skillet, sauté chopped onion for about 4 minutes until translucent. Add minced garlic and cook for 30 seconds until fragrant. Transfer to crockpot over chicken.
  4. Pour chicken broth into crockpot. Stir in dried thyme, rosemary, and Worcestershire sauce gently.
  5. Cover and cook on LOW for 3 to 4 hours until chicken is cooked through and tender (internal temperature 165°F / 74°C).
  6. About 20 minutes before serving, soften cream cheese by stirring with flour until smooth.
  7. Remove chicken breasts from crockpot and set aside covered with foil. Stir cream cheese-flour mixture and heavy cream into crockpot liquid until smooth.
  8. Cover and cook on HIGH for 15-20 minutes, stirring once halfway, until gravy thickens. Adjust thickness with broth or flour-water mixture if needed.
  9. Return chicken breasts to crockpot, spoon gravy over, and warm through for 5 minutes. Adjust seasoning with salt and pepper to taste.

Notes

Browning the chicken before slow cooking adds flavor and keeps it moist. Use a meat thermometer to ensure chicken reaches 165°F. Stir gravy gently after removing chicken to avoid breaking it.
