- 4 boneless, skinless chicken breasts (about 1.5 pounds / 700 grams)
- Salt and pepper to taste (about 1 teaspoon salt and ½ teaspoon pepper)
- 2 tablespoons olive oil (optional, for browning)
- 1 medium yellow onion, finely chopped
- 3 cloves garlic, minced
- 2 cups chicken broth (480 ml), preferably low-sodium
- ½ cup heavy cream (120 ml), can substitute with coconut cream for dairy-free
- 4 ounces cream cheese (115 grams), softened
- 3 tablespoons all-purpose flour (use gluten-free flour if needed)
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary, crushed
- 1 tablespoon Worcestershire sauce (omit for vegetarian gravy)
Instructions
- Pat the chicken breasts dry with paper towels and season generously with salt and pepper.
- Heat olive oil in a skillet over medium-high heat. Brown chicken breasts for 2-3 minutes on each side until golden. Transfer to crockpot.
- In the same skillet, sauté chopped onion for about 4 minutes until translucent. Add minced garlic and cook for 30 seconds until fragrant. Transfer to crockpot over chicken.
- Pour chicken broth into crockpot. Stir in dried thyme, rosemary, and Worcestershire sauce gently.
- Cover and cook on LOW for 3 to 4 hours until chicken is cooked through and tender (internal temperature 165°F / 74°C).
- About 20 minutes before serving, soften cream cheese by stirring with flour until smooth.
- Remove chicken breasts from crockpot and set aside covered with foil. Stir cream cheese-flour mixture and heavy cream into crockpot liquid until smooth.
- Cover and cook on HIGH for 15-20 minutes, stirring once halfway, until gravy thickens. Adjust thickness with broth or flour-water mixture if needed.
- Return chicken breasts to crockpot, spoon gravy over, and warm through for 5 minutes. Adjust seasoning with salt and pepper to taste.
Notes
Browning the chicken before slow cooking adds flavor and keeps it moist. Use a meat thermometer to ensure chicken reaches 165°F. Stir gravy gently after removing chicken to avoid breaking it. Adjust gravy thickness by adding broth or flour-water mixture as needed. Prep ingredients the night before for convenience.
