  • 3 cups shredded cooked chicken (rotisserie or leftover)
  • 2 cups marinara sauce
  • 1 can (14.5 oz) diced fire-roasted tomatoes
  • 4 cups low sodium chicken broth
  • 1 cup finely grated parmesan cheese
  • 3 cloves garlic, minced
  • 1 tablespoon Italian seasoning
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • A handful fresh basil, chopped
  • 1 tablespoon olive oil

Instructions

  1. Prepare the ingredients: mince garlic, chop fresh basil, shred cooked chicken, and grate parmesan cheese.
  2. In a small pan, heat olive oil over medium heat and sauté minced garlic until fragrant and slightly golden, about 1-2 minutes.
  3. Add shredded chicken, marinara sauce, diced tomatoes with juices, chicken broth, sautéed garlic, Italian seasoning, and red pepper flakes (if using) into the crockpot. Stir gently to combine.
  4. Cook on low for 4 to 6 hours, or on high for 2 to 3 hours if short on time.
  5. About 15 minutes before serving, stir in grated parmesan cheese. Taste and season with salt and pepper as needed.
  6. Just before serving, sprinkle chopped fresh basil over individual bowls.

Notes

If soup is too thick, add more chicken broth or water. If too thin, cook uncovered for last 20 minutes to reduce. Use pre-cooked chicken to keep it tender. Sauté garlic before adding to crockpot to avoid bitterness. Add parmesan near the end to prevent graininess. Adjust salt slowly due to broth and marinara salt content. For dairy-free, substitute parmesan with nutritional yeast or vegan cheese. Optional: add heavy cream or half-and-half for creaminess.
