- 1 lb ground beef, browned and drained
- 1 yellow onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced

- 28 oz canned crushed tomatoes
- 2 tbsp tomato paste
- 1 cup beef broth
- 1 can kidney beans, drained and rinsed
- 1 can black beans, drained and rinsed
- 2 tbsp chili powder
- 1 tsp cumin
- 1 tsp smoked paprika
- 1 tsp oregano
- Pinch of cayenne pepper
- Salt and pepper to taste
Instructions
- Brown the ground beef in a skillet over medium heat, breaking it into small pieces as it cooks. Drain excess fat and transfer to the slow cooker.
- Sauté diced onion and minced garlic in the same skillet until softened and fragrant, about 3-4 minutes. Transfer to the slow cooker.
- Add diced bell peppers, crushed tomatoes, tomato paste, and beef broth to the slow cooker.
- Stir in kidney beans and black beans, ensuring they’re evenly distributed.
- Add chili seasoning, salt, and pepper. Stir everything together to combine.
- Set the slow cooker to low and cook for 6-8 hours, or high for 3-4 hours.
- Stir occasionally to ensure even cooking. Taste and adjust seasoning as needed.
- Serve hot with your favorite toppings like shredded cheese, sour cream, green onions, or a squeeze of lime.
Notes
Browning the beef before adding it to the slow cooker enhances the flavor. For a spicier chili, add jalapeños or extra cayenne. Leftovers taste even better the next day.
