  • Author: neuriox
  • Total Time: 6 hours 15 minutes (low) or 3 hours 15 minutes (high)
  • Yield: 6 servings 1x

Description

This hearty and flavorful chili is a comforting dish perfect for cold nights, potlucks, or family dinners. Made effortlessly in a slow cooker, it’s packed with bold flavors and satisfying textures.

Ingredients

Scale
  • 1 lb ground beef, browned and drained
  • 1 yellow onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 28 oz canned crushed tomatoes
  • 2 tbsp tomato paste
  • 1 cup beef broth
  • 1 can kidney beans, drained and rinsed
  • 1 can black beans, drained and rinsed
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1 tsp oregano
  • Pinch of cayenne pepper
  • Salt and pepper to taste

Instructions

  1. Brown the ground beef in a skillet over medium heat, breaking it into small pieces as it cooks. Drain excess fat and transfer to the slow cooker.
  2. Sauté diced onion and minced garlic in the same skillet until softened and fragrant, about 3-4 minutes. Transfer to the slow cooker.
  3. Add diced bell peppers, crushed tomatoes, tomato paste, and beef broth to the slow cooker.
  4. Stir in kidney beans and black beans, ensuring they’re evenly distributed.
  5. Add chili seasoning, salt, and pepper. Stir everything together to combine.
  6. Set the slow cooker to low and cook for 6-8 hours, or high for 3-4 hours.
  7. Stir occasionally to ensure even cooking. Taste and adjust seasoning as needed.
  8. Serve hot with your favorite toppings like shredded cheese, sour cream, green onions, or a squeeze of lime.

Notes

Browning the beef before adding it to the slow cooker enhances the flavor. For a spicier chili, add jalapeños or extra cayenne. Leftovers taste even better the next day.
