  • 1 lb ground beef or turkey
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 14.5 oz canned diced tomatoes
  • 8 oz tomato sauce
  • 15 oz kidney beans, drained and rinsed
  • 15 oz black beans, drained and rinsed
  • 2 tbsp chili powder
  • 1 tbsp cumin
  • 1 tsp smoked paprika
  • 1 tsp oregano
  • Salt to taste (start with 1 tsp)
  • ½ tsp black pepper
  • 1 cup beef broth or water
  • Optional: 1 cup diced bell peppers
  • Optional: hot sauce or cayenne pepper to taste

Instructions

  1. Heat a large skillet over medium-high heat. Add ground beef or turkey and cook for 5-7 minutes, breaking it up until no longer pink. Drain excess fat.
  2. In the same skillet, add diced onion and cook for 3-4 minutes until softened. Add minced garlic and cook for 30 seconds until fragrant.
  3. Transfer browned meat, onions, and garlic to the crockpot. Add diced tomatoes, tomato sauce, kidney beans, black beans, and optional diced bell peppers.
  4. Stir in chili powder, cumin, smoked paprika, oregano, salt, and black pepper. Pour in beef broth or water.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  6. About 30 minutes before serving, taste and adjust seasoning. Add hot sauce or cayenne pepper if desired.
  7. Serve warm with your favorite toppings such as shredded cheese, sour cream, chopped green onions, or fresh cilantro.

Notes

Brown the meat and sauté onions and garlic before adding to the crockpot for deeper flavor. Rinse canned beans to reduce sodium and canning taste. Adjust seasoning gradually as slow cooking intensifies flavors. If chili is too thick near the end, add a splash of broth or water to loosen.
