  • 4 tablespoons (57g) unsalted butter, softened
  • ¼ cup (57g) unsalted butter, melted (for glaze)
  • 2 large eggs, room temperature
  • ¼ cup (85g) honey
  • 2 tablespoons chopped fresh rosemary
  • 2 tablespoons chopped fresh thyme
  • 1 teaspoon garlic powder (optional)

Instructions

  1. Activate the yeast by combining warm milk (110°F/43°C), sugar, and yeast in a small bowl. Stir gently and let rest for 5-7 minutes until frothy.
  2. In a large mixing bowl, whisk together flour and salt.
  3. In a separate bowl, beat the eggs lightly. Add the softened butter and the activated yeast mixture.
  4. Pour wet ingredients into dry ingredients. Knead the dough using a stand mixer with dough hook on medium speed for 6-8 minutes or by hand on a floured surface for 10 minutes until smooth and elastic.
  5. Shape dough into a ball and place in a greased bowl. Cover and let rise in a warm spot for 1 to 1.5 hours until doubled in size.
  6. Mix melted butter, honey, chopped rosemary, thyme, and garlic powder in a small bowl to prepare the honey butter herb glaze.
  7. Punch down the risen dough and roll it out on a floured surface into a 12×16 inch rectangle. Cut into 12 equal squares.
  8. Brush each square generously with the honey butter herb mixture. Stack the squares and place the stack into a greased 9×5 inch loaf pan.
  9. Cover the pan loosely and let the dough rise again for 30-40 minutes until puffed.
  10. Preheat oven to 350°F (175°C). Bake the bread for 30-35 minutes until golden brown and glazed. Tent with foil if browning too quickly.
  11. Brush the baked bread with any remaining honey butter glaze and let cool for 10 minutes before serving.
