Ingredients

- 3 medium tart apples (Granny Smith or Bramley), peeled, cored, and chopped
- 2 tablespoons granulated sugar (to toss with apples)
- 1 teaspoon fresh lemon juice (to toss with apples)
- 2 tablespoons granulated sugar mixed with 1 teaspoon cinnamon (for topping)
Instructions
- Preheat oven to 350°F (175°C). Grease a 9-inch round or 8×8-inch square cake pan and line the bottom with parchment paper.
- Toss chopped apples with 2 tablespoons sugar and 1 teaspoon lemon juice in a medium bowl; set aside.
- Whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt in a separate bowl.
- Beat softened butter and 1 cup sugar with an electric mixer until light and fluffy, about 3-4 minutes.
- Add eggs one at a time, beating well after each addition, then stir in vanilla extract.
- Alternately add the flour mixture and buttermilk in thirds and halves respectively, mixing gently and folding with a spatula to avoid overmixing.
- Fold the prepared apples gently into the batter.
- Pour batter into prepared pan and smooth the top. Sprinkle cinnamon-sugar mixture evenly over the surface.
- Bake for 45-50 minutes or until a toothpick inserted in the center comes out clean.
- Cool cake in the pan for 15 minutes, then transfer to a wire rack to cool completely.

Use tart apples like Granny Smith or Bramley for best flavor and texture. Avoid overmixing the batter to keep the cake tender. Let the cake cool on a wire rack to prevent sogginess.
