  • 2 tablespoons olive oil
  • 1 tablespoon Italian seasoning (dried basil, oregano, and thyme)
  • Salt and pepper to taste
  • Parmesan cheese, grated (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion, minced garlic, sliced carrots, and chopped celery. Sauté for about 5 minutes until the vegetables begin to soften.
  2. Season the vegetables with Italian seasoning, salt, and pepper. Stir well to coat everything evenly.
  3. Add chicken thighs to the pot and pour in the chicken broth and diced tomatoes. Bring the mixture to a gentle boil.
  4. Reduce the heat to low and let the soup simmer for 20-25 minutes, or until the chicken is fully cooked and tender.
  5. Carefully remove the chicken and shred it using two forks. Return the shredded chicken to the pot and stir.
