- 6 cups rye bread, sliced into cubes
- 12 oz (340 g) corned beef, thinly sliced or chopped
- 2 cups (200 g) Swiss cheese, shredded
- 1 cup (150 g) sauerkraut, drained and patted dry
- 3/4 cup (180 ml) Thousand Island dressing
- 1 cup (100 g) Swiss cheese, shredded (for topping)
- 1/2 cup (50 g) Parmesan cheese, finely grated
- 2 tbsp (30 g) butter, melted
- 1 tsp caraway seeds (optional)
- Black pepper to taste
- Paprika to taste
Instructions
- Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish with butter or non-stick spray.
- Cube about 6 cups of rye bread and toss lightly in a bowl to break up any large clumps.
- In a separate bowl, combine 1 cup shredded Swiss cheese, ½ cup grated Parmesan, and 2 tablespoons melted butter. Stir until the butter coats the cheese evenly and set aside.
- Layer half the bread cubes evenly in the baking dish. Drizzle half of the Thousand Island dressing over the bread.
- Add half of the corned beef, then half of the sauerkraut. Sprinkle with a pinch of caraway seeds and black pepper if using. Top with 1 cup shredded Swiss cheese.
- Repeat the layers once more in the same order, finishing with the bread cubes on top.
- Spread the cheesy topping evenly over the final bread layer.
- Bake uncovered for 30-35 minutes until bubbling around the edges and the topping is golden brown. Tent with foil if browning too quickly.
- Remove from oven and let rest for 5-10 minutes before serving.
Notes
Drain and pat dry the sauerkraut to prevent sogginess. Use freshly shredded cheese for better melting and texture. Tent with foil if the topping browns too fast. Let casserole rest after baking for easier slicing.
