Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the minced garlic and diced onion, stirring frequently until fragrant and softened, about 3 minutes.
  2. Add the diced carrots and celery to the pot. Cook for 5-6 minutes, stirring occasionally, until the vegetables start to soften.
