  • 30 mini phyllo cups (store-bought or homemade)
  • 8 oz brie cheese, cut into 1/2-inch cubes
  • 1 cup cranberry sauce (homemade or store-bought)
  • 1/4 cup chopped pecans or walnuts (optional)
  • 2 teaspoons fresh rosemary or thyme, chopped (optional)
  • 2 tablespoons honey or maple syrup (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Cut brie into 1/2-inch cubes. If brie is very soft, chill in the fridge for 10 minutes before cutting.
  3. Arrange mini phyllo cups on the prepared baking sheet, leaving space between each. If using homemade phyllo, layer 3-4 squares in mini muffin tins, brushing lightly with melted butter between layers.
  4. Place one cube of brie into each phyllo cup.
  5. Spoon about 1 teaspoon of cranberry sauce over each brie cube. Avoid overfilling.
  6. Top each bite with a pinch of chopped nuts and a few rosemary leaves, if using.
  7. Bake for 10-12 minutes, until brie is melted and phyllo edges are golden. Check at 9 minutes if your oven runs hot.
  8. Remove from oven and let cool for 3-5 minutes before serving.
  9. Drizzle with honey or maple syrup, if desired, just before serving.
  10. Transfer to a serving platter and garnish with extra herbs if desired. Serve warm or at room temperature.

Notes

Use cold brie for easier cutting. Don’t overfill cups to avoid overflow and soggy pastry. Assemble ahead and bake just before serving for best texture. For gluten-free or dairy-free, use appropriate phyllo cups and cheese alternatives. Nuts and herbs are optional for added flavor and crunch.
