Ingredients
- 2 cups shredded cooked chicken (about 10 oz)
- 8 oz cream cheese, softened
- 1/2 cup sour cream
- 1/2 cup Buffalo wing sauce (such as Frank’s RedHot)
- 1 1/2 cups cheddar cheese, freshly grated (divided)
- 4 green onions, thinly sliced (divided)
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon salt
- Black pepper, to taste
- Optional: 1/4 cup blue cheese crumbles
- Optional: 2 tablespoons ranch dressing
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a 9×9-inch baking dish or 1-quart oven-safe dish.
- In a medium bowl, beat together cream cheese and sour cream until silky smooth and lump-free (about 2 minutes with a hand mixer).
- Add Buffalo wing sauce, garlic powder, onion powder, and salt. Mix until fully incorporated.
- Fold in shredded chicken. If chicken is dry, add ranch dressing or extra sour cream.
- Mix in 1 1/4 cups cheddar cheese and 3 sliced green onions. Reserve 1/4 cup cheddar and 1 green onion for topping.
- Spread mixture evenly into prepared baking dish and smooth the top.
- Sprinkle remaining cheddar and green onion over the top.
- Bake for 20-25 minutes, until bubbly at the edges and hot in the center (internal temp should reach 165°F).
- Optional: Broil for 2-3 minutes for a golden, bubbly cheese topping. Watch closely to avoid burning.
- Let dip cool for 5-10 minutes before serving to firm up.
- Garnish with remaining green onion. Serve warm with tortilla chips, celery sticks, or crackers.
