- 1.5 pounds boneless, skinless chicken breasts
- 2 tablespoons Cajun seasoning
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 3 garlic cloves, minced
- 1 small green bell pepper, diced
- 1 small yellow onion, diced
- 1 cup (240 ml) chicken broth
- 1 cup (240 ml) heavy cream
- ½ cup (50 grams) grated Parmesan cheese
- 2 tablespoons fresh parsley, chopped
- Salt and black pepper to taste
Instructions
- Pat the chicken breasts dry with paper towels. Season both sides evenly with 2 tablespoons of Cajun seasoning, pressing it in gently. Set aside for 5 minutes.
- Heat 2 tablespoons of olive oil over medium-high heat in a large skillet. When the oil shimmers, add the chicken breasts carefully.
- Cook the chicken for 5-6 minutes per side until golden brown and cooked through (internal temperature 165°F / 74°C). Transfer to a plate and tent with foil to keep warm.
- Reduce heat to medium. Add 2 tablespoons unsalted butter to the pan. When melted, add minced garlic, diced onion, and diced green bell pepper. Cook for 4-5 minutes until softened and fragrant.
- Pour in 1 cup chicken broth, scraping the bottom of the pan to loosen browned bits. Simmer for 3 minutes to reduce slightly.
- Slowly stir in 1 cup heavy cream and ½ cup grated Parmesan cheese. Stir continuously until the sauce thickens, about 4-6 minutes. Add more broth or cream if too thick.
- Return the chicken breasts to the pan, nestle into the sauce, and cook for another 2 minutes to meld flavors.
- Sprinkle chopped fresh parsley over the dish. Taste and add salt and black pepper as needed.
- Serve hot with rice, crusty bread, or a simple salad.
Notes
Pat chicken dry before seasoning for a better sear. Add cream slowly to avoid curdling. Rest chicken after searing to keep it juicy. For dairy-free, substitute heavy cream with coconut cream and Parmesan with vegan cheese or nutritional yeast. Sauce may separate slightly after freezing; reheat gently and stir well.
