Ingredients

  • 4 skinless, boneless chicken thighs
  • 1 cup full-fat coconut milk
  • 2 tablespoons freshly squeezed lime juice
  • 1 teaspoon lime zest
  • 2 cloves garlic, minced
  • 1 teaspoon freshly grated ginger
  • 1/2 cup chicken broth
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Chopped cilantro (optional)

Instructions

  1. Pat the chicken thighs dry with paper towels and season both sides generously with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken thighs and cook for 5-6 minutes per side until golden brown. Remove from skillet and set aside.
  3. Reduce heat to medium and add minced garlic and grated ginger to the skillet. Stir for about 30 seconds until fragrant.
  4. Pour in chicken broth and scrape up browned bits from the bottom of the skillet.
  5. Add coconut milk, lime juice, and lime zest to the skillet. Stir until well combined and let the sauce simmer for 3-5 minutes to thicken slightly.
  6. Return chicken thighs to the skillet, nestling them into the sauce. Spoon sauce over the chicken, reduce heat to low, cover, and cook for 10 minutes or until chicken is fully cooked (internal temperature should reach 165°F/74°C).
  7. Remove lid, sprinkle chopped cilantro on top, and adjust seasoning with more lime juice or salt if needed.
  8. Serve hot and enjoy!
