Creamy Cookie Dough Frozen Yogurt Bites

  • Author: Lena
  • Total Time: 3 hours 15 minutes
  • Yield: About 24 bites 1x

Description

These creamy cookie dough frozen yogurt bites are a quick, wholesome treat combining smooth Greek yogurt with soft, sweet cookie dough chunks. Perfect for snacking or parties, they offer a guilt-free indulgence with a balance of protein and probiotics.

Ingredients

Scale
  • 2 cups plain Greek yogurt
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon pure vanilla extract
  • 1/2 cup almond flour
  • 2 tablespoons coconut sugar or brown sugar
  • 2 tablespoons unsalted butter, softened (or coconut oil for dairy-free option)
  • 1 tablespoon milk (dairy or plant-based)
  • 1/4 teaspoon salt
  • 1/4 teaspoon pure vanilla extract
  • 1/3 cup mini chocolate chips

Instructions

  1. Prepare the Cookie Dough (10 minutes): In a small bowl, combine almond flour, coconut sugar, and salt. Add softened butter, milk, and vanilla extract. Mix with a spoon or your hands until a soft dough forms. Fold in mini chocolate chips last to keep them intact.
  2. Make the Yogurt Base (5 minutes): In a medium bowl, whisk Greek yogurt with honey and vanilla extract until smooth and creamy. Taste and adjust sweetness if needed.
  3. Assemble the Bites (5 minutes): Using a small spoon or cookie scoop, drop pea-sized dollops of cookie dough into each cavity of the silicone mold, pressing gently to flatten slightly.
  4. Layer the Yogurt: Spoon the sweetened yogurt over the cookie dough, filling each cavity to the top. Tap the mold gently on the counter to settle the yogurt and remove air bubbles.
  5. Freeze: Place the mold in the freezer for at least 3 hours, or until the yogurt bites are completely firm. For best texture, freeze overnight.
  6. Serve: Pop the bites out of the mold and enjoy immediately or store them in a freezer-safe container with parchment paper between layers.

Notes

If the cookie dough feels too soft and sticky, chill it in the fridge for 10 minutes before scooping to help with portioning. Avoid overmixing the yogurt base to prevent it from becoming watery after freezing. Store bites in an airtight container with parchment paper between layers to prevent sticking. They keep well for up to two weeks in the freezer. Let bites sit at room temperature for a couple of minutes before eating for easier biting.
