Creamy Cookie Dough Overnight Oats Recipe with Mini Chocolate Chips

  • Author: Lena
  • Total Time: 6 hours 5 minutes
  • Yield: 1 serving 1x

Description

A creamy, indulgent overnight oats recipe that mimics cookie dough flavor with mini chocolate chips, perfect for a quick, wholesome breakfast.

Ingredients

Scale
  • ½ cup (45 g) old-fashioned rolled oats
  • ½ cup (120 ml) milk (dairy or plant-based like almond, oat, or cashew milk)
  • ¼ cup (60 g) plain or vanilla Greek yogurt (can substitute dairy-free yogurt for vegan)
  • 1 tbsp (12 g) brown sugar (maple syrup or honey can substitute)
  • ½ tsp vanilla extract
  • 2 tbsp (30 g) mini chocolate chips (recommend Ghirardelli or Enjoy Life)
  • A pinch of salt
  • Optional: sprinkle of cinnamon or 1 tbsp nut butter (peanut or almond)

Instructions

  1. Measure and combine ½ cup rolled oats and ½ cup milk in a mixing bowl or jar. Stir gently to start softening the oats.
  2. Add ¼ cup Greek yogurt, 1 tbsp brown sugar, ½ tsp vanilla extract, and a pinch of salt. Mix well to combine.
  3. Gently fold in 2 tbsp mini chocolate chips, distributing evenly without overmixing.
  4. Cover the jar or bowl tightly and refrigerate for at least 6 hours or overnight to allow oats to absorb liquid and flavors to meld.
  5. In the morning, stir the oats. If too thick, add a splash of milk to loosen; if too thin, refrigerate a few more minutes.
  6. Serve chilled or at room temperature, optionally topped with extra mini chocolate chips, nut butter, or fresh fruit.

Notes

Use rolled oats for best texture; quick oats can be used but may become mushy. Greek yogurt adds creaminess and protein; substitute with dairy-free yogurt for vegan. Mini chocolate chips melt slightly overnight for chocolate bursts without clumping. Adjust sweetness with brown sugar or natural sweeteners. Leave space in jar to avoid spills. For extra thickness, add chia seeds. Store refrigerated up to 3 days; stir before serving and add milk if thickened.
