Instructions
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Gather 4 slices of thick-cut bread. If bread is fresh, let it sit out for 10 minutes or lightly toast it.
- In a medium bowl, whisk together eggs, milk, Greek yogurt (or cream cheese), sugar, vanilla extract, and salt until completely smooth.
- Using the back of a spoon, gently press the center of each bread slice to create a shallow well.
- Spoon 2-3 tablespoons of custard mixture into the well of each bread slice.
- Add your favorite toppings (berries, banana, chocolate chips, etc.) and sprinkle a little extra sugar on top if desired.
- Bake for 10–12 minutes, until custard is just set and bread is golden and crispy at the edges. For extra crispiness, broil for 1–2 minutes at the end, watching closely.
- Let the toast cool for 1–2 minutes to finish setting. Dust with powdered sugar or drizzle with honey/maple syrup and serve warm.
Notes
Use day-old or lightly toasted bread for best texture. Don’t overfill with custard to avoid soggy toast. For dairy-free, use plant-based milk and yogurt. For gluten-free, use sturdy gluten-free bread. Mix custard the night before for a quick morning assembly. Broil briefly for caramelized tops, but watch closely to avoid burning.
