Description
A creamy, savory breakfast casserole made with everything bagels soaked in a rich egg custard, perfect for a cozy brunch or lazy weekend mornings.
Ingredients
- 4 large everything bagels, cut into 1-inch cubes (preferably day-old)
- 8 large eggs, room temperature
- 1 ½ cups heavy cream (whole milk or half-and-half can be used for a lighter option)
- ½ cup milk (any kind, including dairy-free alternatives like oat milk)
- 2 tablespoons everything bagel seasoning (sesame seeds, poppy seeds, dried garlic, onion flakes, salt)
- 1 cup shredded cheese (sharp cheddar or mozzarella, optional but recommended)
- ½ teaspoon salt
- ¼ teaspoon freshly ground black pepper
- Butter or nonstick spray for greasing the baking dish
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter or nonstick spray.
- Cut everything bagels into 1-inch cubes. If using fresh bagels, lightly toast them to maintain texture.
- In a large mixing bowl, whisk together 8 large eggs, 1 ½ cups heavy cream, and ½ cup milk until smooth and slightly frothy.
- Add 2 tablespoons everything bagel seasoning, ½ teaspoon salt, and ¼ teaspoon freshly ground black pepper to the custard. Whisk to combine.
- Gently fold in 1 cup shredded cheese (optional).
- Place bagel cubes evenly into the greased baking dish. Pour the custard mixture over the bagels, pressing lightly with a spatula to help absorption.
- Let the casserole sit at room temperature for 10-15 minutes to allow the bagels to soak up the custard.
- Bake uncovered for 40-45 minutes, or until the top is golden brown and a knife inserted in the center comes out mostly clean. Tent with foil if the top browns too quickly.
- Remove from oven and let rest for 5-10 minutes before serving.
Notes
Use day-old bagels for better custard absorption and to prevent sogginess. Let the casserole soak for 10-15 minutes before baking for a creamy texture. Room temperature eggs and dairy help the custard blend and bake evenly. Tent with foil if the top browns too quickly. For a crispier top, broil for 1-2 minutes at the end, watching closely. Variations include adding veggies, meats, or using dairy-free substitutes.
