- 2 boneless, skinless chicken breasts, diced into bite-sized pieces
- 12 ounces rotini pasta
- 3 tablespoons unsalted butter
- 4–5 garlic cloves, minced
- 1 cup heavy cream
- ½ cup chicken broth
- ½ cup freshly grated Parmesan cheese
- 1 tablespoon olive oil
- Salt and black pepper to taste
- Fresh parsley, chopped (optional)
Instructions
- Bring a large pot of salted water to a boil. Cook the rotini pasta according to package instructions until al dente. Drain and set aside.
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the diced chicken, season with salt and pepper, and cook for 6-8 minutes, stirring occasionally, until golden brown and cooked through. Remove the chicken and set aside.
- In the same skillet, lower the heat to medium and melt 3 tablespoons of butter. Add the minced garlic and sauté for about 1-2 minutes until fragrant.
- Pour in the chicken broth and stir, scraping up any browned bits from the bottom of the skillet. Let it simmer for 2 minutes to reduce slightly.
- Add the heavy cream and stir until combined. Let the sauce simmer gently for 3-4 minutes, stirring occasionally, until it thickens slightly.
- Stir in the grated Parmesan cheese and mix until smooth. Taste and adjust seasoning if needed.
- Add the cooked chicken back to the skillet, followed by the drained rotini pasta. Toss everything together until the pasta and chicken are coated in the creamy sauce.
- Remove from heat and garnish with freshly chopped parsley. Serve immediately while warm.
Notes
For a gluten-free option, swap the rotini pasta with gluten-free pasta. If the sauce is too thick, add a splash of milk or chicken broth to loosen it up. Taste as you go to ensure the flavors are balanced.
