  • 2 boneless, skinless chicken breasts, diced into bite-sized pieces
  • 12 ounces rotini pasta
  • 3 tablespoons unsalted butter
  • 45 garlic cloves, minced
  • 1 cup heavy cream
  • ½ cup chicken broth
  • ½ cup freshly grated Parmesan cheese
  • 1 tablespoon olive oil
  • Salt and black pepper to taste
  • Fresh parsley, chopped (optional)

Instructions

  1. Bring a large pot of salted water to a boil. Cook the rotini pasta according to package instructions until al dente. Drain and set aside.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the diced chicken, season with salt and pepper, and cook for 6-8 minutes, stirring occasionally, until golden brown and cooked through. Remove the chicken and set aside.
  3. In the same skillet, lower the heat to medium and melt 3 tablespoons of butter. Add the minced garlic and sauté for about 1-2 minutes until fragrant.
  4. Pour in the chicken broth and stir, scraping up any browned bits from the bottom of the skillet. Let it simmer for 2 minutes to reduce slightly.
  5. Add the heavy cream and stir until combined. Let the sauce simmer gently for 3-4 minutes, stirring occasionally, until it thickens slightly.
  6. Stir in the grated Parmesan cheese and mix until smooth. Taste and adjust seasoning if needed.
  7. Add the cooked chicken back to the skillet, followed by the drained rotini pasta. Toss everything together until the pasta and chicken are coated in the creamy sauce.
  8. Remove from heat and garnish with freshly chopped parsley. Serve immediately while warm.

Notes

For a gluten-free option, swap the rotini pasta with gluten-free pasta. If the sauce is too thick, add a splash of milk or chicken broth to loosen it up. Taste as you go to ensure the flavors are balanced.
