Instructions
- Season chicken thighs generously with salt, pepper, and Italian seasoning. Set aside.
- In a mixing bowl, whisk together heavy cream, chicken broth, cream cheese, Parmesan cheese, and minced garlic until smooth.
- Place seasoned chicken thighs in the crockpot in a single layer. Pour the creamy garlic Parmesan sauce over the chicken, ensuring it’s evenly coated.
- Add butter in small dollops on top of the chicken and sauce.
- Cover and cook on low for 6-7 hours or high for 3-4 hours until the chicken is tender and easily shreds with a fork.
- Before serving, whisk the sauce to re-incorporate any separated ingredients. Taste and adjust seasoning if needed.
- Garnish with freshly chopped parsley and serve hot over mashed potatoes, pasta, or rice.
