  • 1 medium yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 8 oz (225 g) cremini or white mushrooms, sliced
  • 2 cups (480 ml) beef broth, low sodium preferred
  • 3/4 cup (180 g) full-fat sour cream
  • 2 tablespoons all-purpose flour
  • 2 tablespoons unsalted butter
  • 8 oz (225 g) wide egg noodles, cooked al dente
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • Salt and freshly cracked black pepper, to taste

Instructions

  1. Bring a large pot of salted water to a boil. Add 8 oz egg noodles and cook according to package instructions (7-9 minutes) until al dente. Drain and set aside.
  2. Heat 1 tablespoon butter in a large skillet over medium-high heat. Add ground beef, breaking it apart with a wooden spoon. Cook until browned and no longer pink, about 6-8 minutes. Season lightly with salt and pepper. Drain excess fat and transfer beef to a bowl.
  3. In the same skillet, add remaining 1 tablespoon butter. Add chopped onion and sauté until translucent, about 3-4 minutes. Add sliced mushrooms and cook until softened and slightly golden, about 5 minutes. Stir in minced garlic and cook for 30 seconds until fragrant.
  4. Sprinkle flour over the onion and mushrooms. Stir constantly for 1-2 minutes to cook out raw flour taste. Slowly pour in beef broth while whisking to avoid lumps. Bring to a gentle simmer and cook until thickened, about 4-5 minutes.
  5. Return browned beef to the skillet. Stir in sour cream, Dijon mustard, and Worcestershire sauce. Mix well over low heat, warming through but not boiling. Adjust salt and pepper to taste.
  6. Add cooked noodles to the skillet. Gently stir to coat noodles with the creamy sauce. Let flavors meld for 1-2 minutes.
  7. Serve immediately, optionally garnished with fresh parsley or chives.

Notes

Avoid overheating once sour cream is added to prevent curdling. If sauce thickens too much after resting, stir in a splash of beef broth or water to loosen. Brown meat well for deep flavor and cook mushrooms until golden for best taste. Use fresh garlic for brightness. For gluten-free, substitute flour and noodles accordingly.
