Creamy Lemon Cheesecake Overnight Oats

  • Author: neuriox
  • Total Time: 10 minutes plus overnight chilling
  • Yield: 2 servings 1x

Description

A bright, tangy, and creamy breakfast inspired by cheesecake, perfect for busy mornings or meal prep.

Ingredients

Scale
  • 1 cup rolled oats
  • 1 cup milk (regular, almond, oat, or coconut)
  • 1/2 cup Greek yogurt (plain or vanilla-flavored)
  • 2 ounces cream cheese, softened
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon lemon zest
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 tablespoon chia seeds (optional)
  • Crushed graham crackers for topping

Instructions

  1. In a mixing bowl, whisk together the softened cream cheese, Greek yogurt, lemon juice, lemon zest, vanilla extract, and your choice of sweetener (honey or maple syrup).
  2. Add the rolled oats and chia seeds (if using) to the bowl and stir until everything is well combined.
  3. Gradually pour in the milk, stirring until the mixture reaches a creamy consistency. The oats will absorb the liquid overnight.
  4. Divide the mixture evenly into mason jars or containers, leaving a little room at the top for toppings.
  5. Cover and refrigerate for at least 6 hours, or overnight, allowing the oats to fully soak up the flavors.
  6. Before serving, sprinkle crushed graham crackers on top for a cheesecake-inspired finish. You can also add fresh berries or a drizzle of honey.

Notes

Let cream cheese soften at room temperature to avoid lumps. Adjust sweetness to taste before refrigerating. Add a splash of milk in the morning if oats seem too thick.
