- 2 ounces cream cheese, softened
- 2 tablespoons honey or maple syrup
- 1 tablespoon lemon zest
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1 tablespoon chia seeds (optional)
- Crushed graham crackers for topping
Instructions
- In a mixing bowl, whisk together the softened cream cheese, Greek yogurt, lemon juice, lemon zest, vanilla extract, and your choice of sweetener (honey or maple syrup).
- Add the rolled oats and chia seeds (if using) to the bowl and stir until everything is well combined.
- Gradually pour in the milk, stirring until the mixture reaches a creamy consistency. The oats will absorb the liquid overnight.
- Divide the mixture evenly into mason jars or containers, leaving a little room at the top for toppings.
- Cover and refrigerate for at least 6 hours, or overnight, allowing the oats to fully soak up the flavors.
- Before serving, sprinkle crushed graham crackers on top for a cheesecake-inspired finish. You can also add fresh berries or a drizzle of honey.
Notes
Let cream cheese soften at room temperature to avoid lumps. Adjust sweetness to taste before refrigerating. Add a splash of milk in the morning if oats seem too thick.
