- 12 oz pasta (fettuccine or penne)
- 1 cup mascarpone cheese
- 1 cup freshly grated Parmesan cheese
- 2 tbsp unsalted butter, melted
- 2 cloves garlic, finely minced
- 1/3 cup heavy cream
- 1 tsp salt, or to taste
- 1/2 tsp freshly cracked black pepper
- 2 tbsp fresh parsley, chopped (for garnish)
Instructions
- Bring a large pot of salted water to a boil and cook your pasta according to package instructions. Reserve 1 cup of pasta water, then drain the noodles.
- While the pasta cooks, heat the butter in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute, or until fragrant.
- Lower the heat to medium-low and stir in the mascarpone cheese. Let it melt, stirring occasionally, until smooth.
- Gradually add the heavy cream, stirring continuously to combine. If the sauce feels too thick, add a splash of the reserved pasta water.
- Fold in the Parmesan cheese until it melts and the sauce becomes creamy. Season with salt and freshly cracked black pepper.
- Add the cooked pasta to the skillet and toss to coat evenly. If needed, add more pasta water to loosen the sauce.
- Transfer the pasta to serving plates, garnish with fresh parsley, and serve immediately.
