  • 1/3 cup heavy cream
  • 1 tsp salt, or to taste
  • 1/2 tsp freshly cracked black pepper
  • 2 tbsp fresh parsley, chopped (for garnish)

Instructions

  1. Bring a large pot of salted water to a boil and cook your pasta according to package instructions. Reserve 1 cup of pasta water, then drain the noodles.
  2. While the pasta cooks, heat the butter in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute, or until fragrant.
  3. Lower the heat to medium-low and stir in the mascarpone cheese. Let it melt, stirring occasionally, until smooth.
  4. Gradually add the heavy cream, stirring continuously to combine. If the sauce feels too thick, add a splash of the reserved pasta water.
  5. Fold in the Parmesan cheese until it melts and the sauce becomes creamy. Season with salt and freshly cracked black pepper.
  6. Add the cooked pasta to the skillet and toss to coat evenly. If needed, add more pasta water to loosen the sauce.
  7. Transfer the pasta to serving plates, garnish with fresh parsley, and serve immediately.
