Description
These creamy no-bake cheesecake balls are a quick and easy festive dessert that requires no oven time. They feature a smooth cream cheese filling coated with graham cracker crumbs and colorful sprinkles, perfect for celebrations or last-minute treats.
Ingredients
- 8 ounces (225g) cream cheese, softened (full-fat recommended)
- ½ cup (60g) powdered sugar
- 1 teaspoon pure vanilla extract
- 1 cup (100g) graham cracker crumbs
- 2 tablespoons melted butter
- Festive sprinkles (nonpareils and jimmies mix recommended)
Instructions
- Remove cream cheese from the fridge about 30 minutes before starting to soften.
- In a mixing bowl, beat the cream cheese with powdered sugar and vanilla extract using an electric mixer on medium speed for 3-4 minutes until fluffy and smooth.
- In a separate bowl, combine graham cracker crumbs with melted butter and stir until evenly coated and slightly clumped.
- Using a small cookie scoop or spoon, portion the cream cheese mixture into 1-inch balls and roll gently between palms to smooth the shape.
- Roll each ball first in the graham cracker crumb mixture, pressing lightly to adhere, then roll in festive sprinkles.
- Place the coated balls on a parchment-lined baking sheet or plate and chill in the refrigerator for at least 1 hour before serving.
Notes
If the mixture is too soft to roll, chill it for 15 minutes before shaping. Keep hands cool to prevent melting. For vegan or gluten-free versions, substitute ingredients accordingly. Rolling balls gently preserves a light texture. Chill at least 1 hour for best texture. Serve chilled and roll in sprinkles just before chilling to avoid color bleeding.
