Description

Ingredients

  • 1 lb ground beef
  • 1/3 cup breadcrumbs
  • 1 large egg
  • 2 tbsp grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • Salt and pepper, to taste
  • 3 tbsp unsalted butter
  • 3 cloves garlic, minced
  • 1 tbsp chopped fresh parsley (optional for garnish)
  • 12 oz linguine
  • 1 1/2 cups heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 1 tbsp olive oil
  • Salt and pepper, to taste

Instructions

  1. Boil a large pot of salted water and cook the linguine according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.
  2. In a mixing bowl, combine ground beef, breadcrumbs, egg, Parmesan, garlic, Italian seasoning, salt, and pepper. Mix until well-combined, but don’t overwork the mixture. Roll into 1-inch meatballs.
  3. Heat olive oil in a large skillet over medium heat. Add the meatballs and cook until browned on all sides, about 6–8 minutes. Remove and set aside.
  4. In the same skillet, melt butter over low heat. Stir in minced garlic and cook until fragrant, about 1 minute. Add the meatballs back into the skillet and toss to coat in garlic butter.
  5. Reduce heat to low and pour in heavy cream. Stir gently and bring to a simmer. Add Parmesan cheese, stirring until fully melted and creamy. Season with salt and pepper to taste.
  6. Add cooked linguine to the skillet, tossing to coat evenly in the sauce. If the sauce is too thick, add a splash of reserved pasta water.
  7. Plate the creamy linguine and top with garlic butter meatballs. Garnish with fresh parsley, if desired.

Notes

Reserve pasta water to loosen thick sauces. Grate your own Parmesan for a smoother sauce. Avoid overcrowding the skillet when searing meatballs.
