- 1 lb ground beef
- 1/3 cup breadcrumbs
- 1 large egg
- 2 tbsp grated Parmesan cheese
- 2 cloves garlic, minced
- 1 tsp Italian seasoning
- Salt and pepper, to taste
- 3 tbsp unsalted butter
- 3 cloves garlic, minced
- 1 tbsp chopped fresh parsley (optional for garnish)
- 12 oz linguine
- 1 1/2 cups heavy cream
- 1 cup freshly grated Parmesan cheese
- 1 tbsp olive oil
- Salt and pepper, to taste
Instructions
- Boil a large pot of salted water and cook the linguine according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.
- In a mixing bowl, combine ground beef, breadcrumbs, egg, Parmesan, garlic, Italian seasoning, salt, and pepper. Mix until well-combined, but don’t overwork the mixture. Roll into 1-inch meatballs.
- Heat olive oil in a large skillet over medium heat. Add the meatballs and cook until browned on all sides, about 6–8 minutes. Remove and set aside.
- In the same skillet, melt butter over low heat. Stir in minced garlic and cook until fragrant, about 1 minute. Add the meatballs back into the skillet and toss to coat in garlic butter.
- Reduce heat to low and pour in heavy cream. Stir gently and bring to a simmer. Add Parmesan cheese, stirring until fully melted and creamy. Season with salt and pepper to taste.
- Add cooked linguine to the skillet, tossing to coat evenly in the sauce. If the sauce is too thick, add a splash of reserved pasta water.
- Plate the creamy linguine and top with garlic butter meatballs. Garnish with fresh parsley, if desired.
Notes
Reserve pasta water to loosen thick sauces. Grate your own Parmesan for a smoother sauce. Avoid overcrowding the skillet when searing meatballs.
