  • 8 oz ribeye steak or sirloin, thinly sliced
  • 8 oz cream cheese, softened
  • 1 cup provolone cheese, shredded
  • 1 medium yellow onion, finely chopped
  • 1 small green bell pepper, finely diced (optional)
  • 1 tsp garlic powder
  • 1 tbsp Worcestershire sauce
  • Salt and freshly ground black pepper, to taste
  • 1 tbsp olive oil or butter

Instructions

  1. Thinly slice 8 oz of ribeye steak or sirloin against the grain. Finely chop 1 medium yellow onion and dice 1 small green bell pepper. Soften 8 oz cream cheese by leaving it out at room temperature for 30 minutes.
  2. Heat 1 tbsp olive oil or butter in a skillet over medium heat. Add the chopped onion and bell pepper, cooking for about 5 minutes until softened and slightly caramelized, stirring occasionally.
  3. Push the veggies to one side of the pan. Add the thinly sliced steak to the hot skillet and cook for 3-4 minutes, stirring occasionally until browned but still juicy. Season with salt, pepper, and 1 tsp garlic powder.
  4. Lower heat to medium-low. Add the softened cream cheese to the pan, breaking it up with a spatula. Stir gently to combine with steak and veggies until the mixture is smooth and creamy.
  5. Sprinkle 1 cup shredded provolone cheese evenly over the mixture. Drizzle 1 tbsp Worcestershire sauce. Stir until the cheese melts and the dip is silky.
  6. If your skillet isn’t oven-safe, transfer the dip to a small baking dish. Otherwise, keep it in the skillet.
  7. Place under a preheated broiler for 2-3 minutes or in a 375°F (190°C) oven for about 5 minutes until the top is bubbly and lightly golden. Watch closely to avoid burning.
  8. Remove from oven carefully. Let it cool for a minute or two before serving with your favorite dippers like toasted baguette slices, crackers, or crunchy veggies.

Notes

If the dip is too thick, add a splash of milk or broth when mixing in the cream cheese. Beat cream cheese briefly before adding for smoother texture. Avoid overcooking the steak to keep it tender. Watch the dip closely under the broiler to prevent burning.
