A quick and comforting dish featuring tender ravioli, crispy bacon, and a creamy carbonara sauce, perfect for busy weeknights or cozy dinners.
Ingredients
- Fresh ravioli (cheese-filled, spinach, or mushroom)
- Thick-cut bacon
- Egg yolks
- Heavy cream (or half-and-half)
- Freshly grated Parmesan cheese
- Black pepper
- Salt
- Garlic (optional)
- Parsley (optional)
Instructions
- Bring a large pot of salted water to a boil. Cook the ravioli according to package instructions until tender, usually around 4 minutes. Reserve ½ cup of pasta water, then drain the ravioli.
- Heat a large skillet over medium heat. Add chopped bacon and cook until crispy, about 6-8 minutes. Remove bacon with a slotted spoon and set aside, leaving the bacon grease in the skillet.
- Lower the heat slightly and add minced garlic to the skillet (if using). Cook for 30 seconds until fragrant, being careful not to burn it.
- In a medium bowl, whisk together egg yolks, heavy cream, and grated Parmesan cheese until smooth.
- Gradually add the reserved pasta water to the egg mixture, whisking constantly to temper the eggs and prevent scrambling.
- Turn the heat to low and pour the egg and cream mixture into the skillet with the bacon grease. Stir constantly for 2-3 minutes until the sauce thickens slightly.
- Add the cooked ravioli to the skillet and toss gently to coat in the sauce. Stir in the crispy bacon and season with freshly cracked black pepper and a pinch of salt.
- Top with additional Parmesan cheese and chopped parsley if desired. Serve immediately.
