- Skinless salmon fillets, cut into bite-sized pieces
- Store-bought potato gnocchi
- 1 cup heavy cream
- 1 cup chicken broth (or vegetable broth for pescatarian version)
- 2 cloves garlic, finely minced
- 2 tablespoons unsalted butter
- 1/2 cup freshly grated Parmesan cheese
- 2 cups fresh spinach (baby spinach preferred)
- 1 tablespoon lemon juice
- Salt and pepper to taste
- Fresh parsley or dill for garnish
Instructions
- Cut the salmon into bite-sized chunks and season lightly with salt and pepper.
- Heat 1 tablespoon of butter in a large skillet over medium heat. Add the salmon pieces and sauté for 2-3 minutes until they’re just cooked. Remove from the skillet and set aside.
- Add another tablespoon of butter to the skillet. Toss in the minced garlic and cook for 1 minute, stirring constantly, until fragrant.
- Pour in the chicken broth and heavy cream, stirring to combine. Bring to a gentle simmer and let it cook for 2-3 minutes.
- Stir the gnocchi into the sauce. Cover the skillet and let it cook for 5 minutes, stirring occasionally, until the gnocchi is tender.
- Stir in the Parmesan cheese, spinach, and lemon juice. Return the salmon to the skillet and cook for another 2 minutes, just to heat through.
- Top with fresh parsley or dill before serving. Enjoy warm!
