  • Skinless salmon fillets, cut into bite-sized pieces
  • Store-bought potato gnocchi
  • 1 cup heavy cream
  • 1 cup chicken broth (or vegetable broth for pescatarian version)
  • 2 cloves garlic, finely minced
  • 2 tablespoons unsalted butter
  • 1/2 cup freshly grated Parmesan cheese
  • 2 cups fresh spinach (baby spinach preferred)
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Fresh parsley or dill for garnish

Instructions

  1. Cut the salmon into bite-sized chunks and season lightly with salt and pepper.
  2. Heat 1 tablespoon of butter in a large skillet over medium heat. Add the salmon pieces and sauté for 2-3 minutes until they’re just cooked. Remove from the skillet and set aside.
  3. Add another tablespoon of butter to the skillet. Toss in the minced garlic and cook for 1 minute, stirring constantly, until fragrant.
  4. Pour in the chicken broth and heavy cream, stirring to combine. Bring to a gentle simmer and let it cook for 2-3 minutes.
  5. Stir the gnocchi into the sauce. Cover the skillet and let it cook for 5 minutes, stirring occasionally, until the gnocchi is tender.
  6. Stir in the Parmesan cheese, spinach, and lemon juice. Return the salmon to the skillet and cook for another 2 minutes, just to heat through.
  7. Top with fresh parsley or dill before serving. Enjoy warm!
