These creamy spinach stuffed mushrooms are a crowd-pleasing appetizer, perfect for parties or cozy nights in. Packed with cheesy, garlicky spinach filling, they’re easy to make and irresistibly delicious.

- 16–20 large button mushrooms, cleaned and stems removed
- 2 cups fresh spinach, chopped and lightly sautéed
- 4 ounces cream cheese, softened
- 1/4 cup Parmesan cheese, freshly grated
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper, to taste
- Bread crumbs (optional)
Instructions
- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper for easy cleanup.
- Clean the mushrooms by gently wiping them with a damp paper towel. Remove the stems and set aside (you can chop these and add them to the filling if you’d like).
- Heat olive oil in a skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Toss in the chopped spinach and cook until wilted, about 2-3 minutes. Remove from heat and let cool slightly.
- In a mixing bowl, combine the softened cream cheese, Parmesan cheese, sautéed spinach and garlic mixture, and a pinch of salt and pepper. Stir until smooth and well combined.
- Using a small spoon, fill each mushroom cap with the creamy spinach mixture. Be generous but don’t overfill—just enough to create a slight mound on top of each mushroom.
- Optional: Sprinkle a small amount of bread crumbs over the stuffed mushrooms for added texture.
- Arrange the stuffed mushrooms on the prepared baking sheet. Drizzle or brush a little olive oil over them to keep the mushrooms moist while baking.
- Bake in the preheated oven for 20-25 minutes or until the mushrooms are tender and the filling is bubbly and golden on top.
- Remove from the oven and let cool for 5 minutes before serving. Enjoy!
