Description

Tender steak bites atop fluffy rice, smothered in creamy queso sauce for a hearty and satisfying meal perfect for dinner.

Ingredients

Scale
  • 1 lb sirloin steak, cut into bite-sized cubes
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • Salt and pepper, to taste
  • 2 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • 1 cup whole milk
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 1/4 tsp chili powder
  • 1/4 tsp cumin
  • 2 cups cooked white or brown rice
  • Optional toppings: diced tomatoes, sliced green onions, chopped cilantro, jalapeños

Instructions

  1. Season the steak cubes with garlic powder, smoked paprika, salt, and pepper. Toss to coat evenly.
  2. Heat olive oil in a large skillet over medium-high heat. Add the steak pieces and sear for 2-3 minutes per side until browned and cooked to your desired doneness. Remove from heat and let rest.
  3. In a medium saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1-2 minutes to form a roux. Slowly pour in the milk, whisking constantly to prevent lumps. Simmer for 3-4 minutes until slightly thickened.
  4. Add the shredded cheddar and Monterey Jack cheeses, stirring until fully melted and smooth. Mix in chili powder and cumin for extra flavor.
  5. Divide the cooked rice between bowls. Top with steak pieces and pour the queso sauce generously over the top.
  6. Optional: Garnish with diced tomatoes, green onions, cilantro, or jalapeños for added flavor and visual appeal.
  7. Serve immediately and enjoy!

Notes

[‘Don’t overcrowd the pan when searing the steak to ensure even browning.’, ‘Whisk continuously when adding milk to the roux to avoid lumps in the queso sauce.’, ‘Allow the steak to rest for a few minutes after cooking to retain its juices.’, ‘Taste the queso sauce before serving and adjust the spices to suit your preference.’, ‘Prepare the rice ahead of time to speed up the assembly process.’]
