A quick and easy homemade strawberry cream cheese frosting that is tangy, sweet, and silky smooth, perfect for cakes, cupcakes, pancakes, and more.

- 4 oz (115g) cream cheese, softened
- 4 tablespoons (57g) unsalted butter, softened
- 1 ½ cups (180g) powdered sugar, sifted
- ½ cup (about 75g) fresh strawberries, hulled and roughly chopped
- 1 teaspoon vanilla extract
- Pinch of salt
- 1 teaspoon freshly squeezed lemon juice (optional)
Instructions
- Rinse, hull, and roughly chop ½ cup (about 75g) of fresh strawberries. Puree in a food processor or blender until smooth. Optionally strain through a fine mesh sieve to remove seeds. Set aside.
- Soften cream cheese and unsalted butter to room temperature.
- In a mixing bowl, beat cream cheese and butter on medium speed until smooth and creamy, about 2 minutes.
- Gradually add powdered sugar with mixer on low speed, beating well after each addition.
- Add vanilla extract and a pinch of salt, then beat to combine.
- Slowly add the strawberry puree (about ¼ cup or 60ml), mixing on low speed until just combined. Adjust consistency by adding more powdered sugar if too thin or lemon juice if too thick.
- Taste and adjust sweetness or tartness as needed.
- If frosting is too soft to spread, refrigerate for 10-15 minutes before using.
Notes
Use full-fat cream cheese for best creaminess. If fresh strawberries are not in season, frozen berries can be used after thawing and draining excess liquid. For a dairy-free version, substitute cream cheese and butter with vegan alternatives. Avoid overbeating to prevent grainy texture. Chill frosting if too soft to spread or pipe.
