  • 6 tbsp cold unsalted butter, cubed (85g) for streusel
  • ½ cup rolled oats (45g) for streusel
  • 1 tsp cinnamon (optional) for streusel
  • Pinch of salt for streusel

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking pan or line with parchment paper.
  2. Make the streusel topping: In a medium bowl, combine ¾ cup flour, ½ cup brown sugar, ½ cup rolled oats, 1 tsp cinnamon, and a pinch of salt. Add cold cubed butter and work into mixture with fingers or pastry cutter until coarse crumbs form. Chill in fridge.
  3. Prepare cake batter: In a large bowl, beat softened cream cheese and butter with an electric mixer on medium speed until smooth and creamy (2-3 minutes).
  4. Add granulated sugar and beat until fluffy.
  5. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  6. In a separate bowl, whisk together 2 ½ cups flour, baking powder, and salt.
  7. Alternately add dry ingredients and milk to wet mixture, starting and ending with dry ingredients. Mix gently until just combined.
  8. Fold in chopped strawberries gently with a spatula.
