Description

Ingredients

  • 1 cup Arborio rice
  • 1/2 cup sun-dried tomatoes, finely chopped (packed in oil)
  • 2 cups fresh spinach (baby spinach preferred)
  • 4 cups chicken or vegetable broth, warmed
  • 1/2 cup dry white wine (optional)
  • 1/2 cup freshly grated Parmesan cheese
  • 2 tablespoons unsalted butter, divided
  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Warm the chicken or vegetable broth in a small saucepan over low heat. Keep it warm throughout the process.
  2. In a large sauté pan, heat olive oil and 1 tablespoon of butter over medium heat. Add the chopped onion and cook until softened, about 3-4 minutes. Stir in the minced garlic and cook for another minute.
  3. Add the Arborio rice to the pan, stirring frequently for 2-3 minutes until slightly translucent.
  4. Pour in the white wine and stir until mostly absorbed, about 1-2 minutes.
  5. Using a ladle, add one cup of warm broth to the rice. Stir frequently until the liquid is absorbed. Repeat this process, adding broth one cup at a time, until the rice is creamy and tender. This should take about 20-25 minutes.
  6. Stir in the chopped sun-dried tomatoes during the last few minutes of cooking.
  7. Once the rice is cooked, stir in the fresh spinach until wilted. Add the grated Parmesan cheese and remaining tablespoon of butter. Stir until creamy and well combined.
  8. Add salt and pepper as needed. Serve hot!

Notes

Warm your broth before adding it to the rice for even absorption. Stir frequently and add liquid gradually to achieve the perfect creamy texture. Feel free to add cooked chicken, shrimp, or mushrooms for extra protein or flavor.
