Ingredients

  • 2 cups cooked sushi rice
  • 2 tbsp rice vinegar
  • 1 tbsp sugar
  • 1/2 tsp salt
  • 8 oz crab meat (imitation or real)
  • 8 oz cooked and flaked salmon
  • 1/4 cup mayonnaise (preferably Japanese mayo like Kewpie)
  • 1 tbsp sriracha
  • 4 oz cream cheese, softened
  • 1 tbsp soy sauce
  • Furikake seasoning, to taste
  • Nori sheets, optional for serving
  • Green onions, finely chopped for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare the sushi rice. If using a rice cooker, follow the instructions for 2 cups of rice. Once cooked, mix in 2 tbsp rice vinegar, 1 tbsp sugar, and 1/2 tsp salt. Spread the rice evenly into the bottom of a greased 9×13-inch baking dish.
  3. In a mixing bowl, combine the crab meat, flaked salmon, 1/4 cup mayonnaise, 1 tbsp sriracha, 4 oz cream cheese, and 1 tbsp soy sauce. Stir until the mixture is creamy and well-combined.
  4. Spread the creamy seafood mixture evenly over the sushi rice layer.
  5. Sprinkle furikake generously over the top for added flavor and texture.
  6. Bake for 20 minutes, or until the top is golden and bubbly.
  7. Remove from the oven and let it cool for 5 minutes. Garnish with chopped green onions and serve with nori sheets for scooping.
