  • 2 cups fresh baby spinach (or kale as a substitute)
  • 1 cup heavy cream (full-fat, or half-and-half for lighter option)
  • 1/2 cup freshly grated Parmesan cheese
  • 2 tablespoons cream cheese, softened
  • 1/2 cup low sodium chicken broth
  • 1 teaspoon dried Italian herbs (oregano, basil, thyme blend)
  • 1/4 cup white wine (optional)
  • Salt and pepper to taste
  • Pinch of red pepper flakes (optional)

Instructions

  1. Pat dry chicken breasts and season both sides with salt, pepper, and dried Italian herbs. Let rest for 5 minutes.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken breasts and cook 4-5 minutes per side until golden brown and cooked through (internal temperature 165°F). Remove chicken and tent with foil.
  3. Reduce heat to medium. Add minced garlic and chopped sun-dried tomatoes to the skillet. Sauté 1-2 minutes until fragrant.
  4. Pour in white wine (if using) and chicken broth. Scrape the bottom of the pan to loosen browned bits. Simmer 2-3 minutes to reduce slightly.
  5. Stir in heavy cream, cream cheese, and Parmesan cheese. Whisk gently until cream cheese melts and sauce thickens. Keep heat low to prevent curdling.
  6. Add fresh spinach and cook until wilted, about 1-2 minutes. Season sauce with salt, pepper, and red pepper flakes if desired.
  7. Return chicken breasts to the skillet, nestle into the sauce, and warm together for 2-3 minutes.
  8. Serve chicken topped with creamy Tuscan sauce. Garnish with extra Parmesan or fresh herbs if desired.

Notes

If sauce gets too thick, thin with a splash of chicken broth or water. For extra flavor, add a squeeze of fresh lemon juice before serving. Avoid high heat when adding cream to prevent curdling. Use room temperature chicken for even cooking. Can finish chicken under broiler for 2 minutes for extra crisp.
