- 1 lb Italian sausage (mild or spicy)
- 6 slices bacon
- 4 medium russet potatoes, peeled and sliced thinly
- 2 cups chopped kale
- 4 cups low-sodium chicken broth
- 1 cup heavy cream
- 4 cloves garlic, minced
- 1 medium onion, finely chopped
- Salt and pepper to taste
- 1/2 tsp red pepper flakes (optional)
Instructions
- Heat a large skillet over medium heat. Add the bacon slices and cook until crispy, about 6-8 minutes. Remove and set aside on a paper towel-lined plate.
- In the same skillet, add the Italian sausage. Break it into small pieces and cook until browned, about 5-7 minutes. Drain excess grease if needed.
- In your slow cooker, add the sliced potatoes, chopped onion, minced garlic, and cooked sausage.
- Pour in the chicken broth until the ingredients are fully submerged. Add salt, pepper, and red pepper flakes to taste. Cover and cook on low for 6-7 hours or high for 3-4 hours.
- About 30 minutes before the soup is done, stir in the chopped kale. Let it cook until tender.
- Finally, stir in the heavy cream and crumble the cooked bacon into the soup. Let it heat through for about 10 minutes, then serve hot.
Notes
For a thicker soup, mash a few potato slices against the side of the pot. Add kale towards the end to keep it tender and vibrant. Adjust spice levels by using mild sausage and skipping red pepper flakes.
