  • 2 large eggs, beaten
  • 1/4 cup whole milk (or plant-based milk)
  • 1 cup panko breadcrumbs (gluten-free if needed)
  • 1/3 cup grated Parmesan cheese
  • 2 tablespoons finely grated Pecorino Romano cheese (optional)
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter, melted (for drizzle, optional)
  • 2 cloves garlic, minced (or 1/2 teaspoon garlic powder, for drizzle)
  • 1 tablespoon fresh parsley, chopped (for drizzle)

Instructions

  1. Wash and thoroughly dry the cauliflower. Cut into bite-sized florets (about 1.5 inches each).
  2. In a large bowl, whisk together eggs and milk until well combined.
  3. In a separate bowl, combine panko breadcrumbs, Parmesan, Pecorino Romano (if using), garlic powder, smoked paprika, salt, and black pepper. Drizzle in olive oil and toss until mixture resembles damp sand.
  4. Dip cauliflower florets into the egg mixture, shaking off excess, then roll in the breadcrumb mixture, pressing gently so the coating sticks. Set aside on a plate.
  5. Preheat air fryer to 400°F for 3-5 minutes. Lightly spray the basket with oil.
  6. Arrange coated cauliflower in a single layer in the basket. Lightly spritz or brush tops with oil. Air fry at 400°F for 10-12 minutes, shaking basket or turning florets halfway through, until golden brown and crispy.
  7. While cauliflower cooks, melt butter in a small saucepan over low heat. Add minced garlic; cook until fragrant, about 1 minute. Remove from heat and stir in chopped parsley (optional drizzle).
  8. Transfer crispy bites to a serving platter. Drizzle with garlic butter and sprinkle with extra Parmesan and parsley. Serve hot with your favorite dipping sauce.
