Description

  • 1 lb sirloin or ribeye steak, cut into 1-inch cubes
  • 1 tablespoon olive oil
  • 1 teaspoon kosher or sea salt
  • ½ teaspoon freshly ground black pepper
  • ½ teaspoon garlic powder
  • 3 tablespoons unsalted butter, softened
  • 3 cloves fresh garlic, minced
  • 1 tablespoon fresh parsley, finely chopped (optional)
  • 1 teaspoon lemon juice (optional)

Instructions

  1. Pat 1 lb steak cubes dry with paper towels and place in a large bowl.
  2. Drizzle 1 tablespoon olive oil over the steak. Sprinkle 1 teaspoon salt, ½ teaspoon black pepper, and ½ teaspoon garlic powder. Toss well to coat evenly.
  3. Preheat air fryer to 400°F (200°C) for about 5 minutes.
  4. Arrange steak cubes in a single layer in the air fryer basket, leaving space between pieces. Cook for 7-9 minutes, shaking or turning halfway through, until deep brown crust forms and interior is juicy.
  5. While steak cooks, melt 3 tablespoons butter in a small saucepan or microwave-safe bowl. Stir in minced garlic and 1 teaspoon lemon juice, cooking gently for 1-2 minutes until fragrant. Remove from heat.
  6. Transfer cooked steak bites back to the mixing bowl. Pour garlic butter glaze over and toss gently to coat every piece.
  7. Sprinkle chopped fresh parsley over the top if using. Serve immediately.

Notes

Do not overcrowd the air fryer basket to ensure crispiness. Pat steak dry before seasoning for best sear. Use fresh garlic for the glaze and melt butter on low heat to avoid burning. For medium-rare, cook closer to 7 minutes; for medium-well, cook closer to 9 minutes. Leftovers can be reheated in the air fryer at 350°F for 3-4 minutes to regain crispiness.
