  • 10 oz (280g) regular marshmallows (mini or chopped large marshmallows)
  • 4 tablespoons (56g) unsalted butter, softened
  • 1/2 cup (120ml) apple cider, preferably fresh or unfiltered
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Pour 1/2 cup (120ml) of apple cider into a saucepan and simmer over medium heat for 5-7 minutes until reduced by half.
  2. Lower heat to medium-low and add 4 tablespoons (56g) unsalted butter to the reduced cider; stir until melted.
  3. Add 10 oz (280g) marshmallows to the cider-butter mixture and stir continuously until completely melted and smooth, about 4-5 minutes.
  4. Remove from heat and stir in 1 teaspoon cinnamon, 1/4 teaspoon nutmeg, 1 teaspoon vanilla extract, and a pinch of salt until well combined.
  5. Pour the melted mixture over 6 cups (150g) crispy rice cereal in a large bowl and fold gently but thoroughly to coat all cereal.
  6. Line a 9×13 inch (23×33 cm) baking dish with parchment paper or lightly grease it.
  7. Transfer the cereal mixture to the prepared dish and press down firmly but evenly.
  8. Let the treats cool at room temperature for at least 1 hour before slicing into squares.

Notes

Reduce the apple cider before mixing to avoid soggy treats. Press the mixture gently for a crispy texture; pressing too hard makes them dense. Use fresh or unfiltered cider for best flavor. For dairy-free, substitute butter with coconut oil and use vegan marshmallows. Store in an airtight container at room temperature for up to 3 days or freeze individually wrapped.
