Crispy Bacon-Wrapped Jalapeño Poppers Recipe Easy Homemade Snack with Ranch Dip

  • Author: Lena
  • Total Time: 40-45 minutes
  • Yield: 12 servings 1x

Description

These crispy bacon-wrapped jalapeño poppers feature a creamy cheese filling balanced by spicy jalapeños and smoky bacon, served with a cool ranch dip. Perfect as a quick, crowd-pleasing snack for parties or casual get-togethers.

Ingredients

Scale
  • 12 medium fresh jalapeños
  • 8 oz (225 g) cream cheese, softened to room temperature
  • 1 cup (100 g) sharp cheddar cheese, shredded
  • 12 slices thick-cut bacon
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Pinch of salt
  • 1/4 tsp freshly ground black pepper
  • Ranch seasoning mix (store-bought or homemade)
  • 1/2 cup (120 ml) buttermilk or plain yogurt
  • Fresh herbs (optional, like chives or parsley for garnishing the ranch dip)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wearing gloves, slice each jalapeño in half lengthwise and scoop out the seeds and membranes to reduce heat if desired. Set aside.
  3. In a mixing bowl, combine softened cream cheese, shredded sharp cheddar, garlic powder, onion powder, salt, and black pepper. Mix until smooth and evenly blended.
  4. Fill each jalapeño half generously with the cheese mixture, mounding slightly.
  5. Wrap each stuffed jalapeño half with one slice of bacon, starting from the pointed end and spiraling to the wider end. Secure with a toothpick if needed.
  6. Arrange the poppers seam side down on a rimmed baking sheet. Use a wire rack on the baking sheet if available.
  7. Bake in the preheated oven for 20-25 minutes until bacon is crispy and cheese filling is bubbly. Watch closely after 20 minutes to avoid overcooking.
  8. While baking, prepare the ranch dip by whisking ranch seasoning mix with buttermilk or yogurt until smooth. Chill until serving.
  9. Remove poppers from oven and let cool for about 5 minutes to firm up the cheese.
  10. Serve warm with chilled ranch dip garnished with fresh herbs.

Notes

Use gloves when handling jalapeños to avoid skin irritation. Thick-cut bacon crisps better without burning. If bacon browns too quickly, tent loosely with foil. Let poppers rest 5 minutes after baking to firm up cheese. For milder heat, remove seeds and membranes. Ranch dip can be customized with smoked paprika or fresh herbs. Poppers can be assembled ahead and refrigerated up to 1 day before baking. Leftovers keep up to 3 days refrigerated; reheat in oven for best crispiness.
