Ingredients
- 12 medium fresh jalapeños
- 8 oz (225 g) cream cheese, softened to room temperature
- 1 cup (100 g) sharp cheddar cheese, shredded
- 12 slices thick-cut bacon
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- Pinch of salt
- 1/4 tsp freshly ground black pepper
- Ranch seasoning mix (store-bought or homemade)
- 1/2 cup (120 ml) buttermilk or plain yogurt
- Fresh herbs (optional, like chives or parsley for garnishing the ranch dip)
Instructions
- Preheat your oven to 400°F (200°C).
- Wearing gloves, slice each jalapeño in half lengthwise and scoop out the seeds and membranes to reduce heat if desired. Set aside.
- In a mixing bowl, combine softened cream cheese, shredded sharp cheddar, garlic powder, onion powder, salt, and black pepper. Mix until smooth and evenly blended.
- Fill each jalapeño half generously with the cheese mixture, mounding slightly.
- Wrap each stuffed jalapeño half with one slice of bacon, starting from the pointed end and spiraling to the wider end. Secure with a toothpick if needed.
- Arrange the poppers seam side down on a rimmed baking sheet. Use a wire rack on the baking sheet if available.
- Bake in the preheated oven for 20-25 minutes until bacon is crispy and cheese filling is bubbly. Watch closely after 20 minutes to avoid overcooking.
- While baking, prepare the ranch dip by whisking ranch seasoning mix with buttermilk or yogurt until smooth. Chill until serving.
- Remove poppers from oven and let cool for about 5 minutes to firm up the cheese.
- Serve warm with chilled ranch dip garnished with fresh herbs.
