Ingredients
- 2 cans (8 oz each) whole water chestnuts, drained and rinsed
- 1 pound regular-cut bacon (not thick-cut)
- 1/4 cup brown sugar (light or dark)
- 2 tablespoons soy sauce (regular or low-sodium, or tamari for gluten-free)
- Toothpicks (wooden, for securing bites)
- Optional: pinch garlic powder
- Optional: pinch cayenne pepper
- Optional: honey or maple syrup (swap for or mix with brown sugar for deeper sweetness)
Instructions
- Preheat oven to 400°F (200°C).
- Drain and rinse water chestnuts. Pat dry thoroughly with paper towels.
- Cut bacon into thirds crosswise to create bite-sized strips.
- In a small bowl, mix brown sugar and soy sauce. Add garlic powder or cayenne pepper if desired. Set aside.
- Wrap each water chestnut with a bacon strip and secure with a toothpick, piercing both ends.
- Arrange wrapped bites seam-side down on a wire rack set over a rimmed baking sheet (or directly on a lined baking sheet).
- Brush each bite lightly with the brown sugar soy glaze. Reserve some glaze for midway through baking.
