  • 1 pound regular-cut bacon (not thick-cut)
  • 1/4 cup brown sugar (light or dark)
  • 2 tablespoons soy sauce (regular or low-sodium, or tamari for gluten-free)
  • Toothpicks (wooden, for securing bites)
  • Optional: pinch garlic powder
  • Optional: pinch cayenne pepper
  • Optional: honey or maple syrup (swap for or mix with brown sugar for deeper sweetness)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Drain and rinse water chestnuts. Pat dry thoroughly with paper towels.
  3. Cut bacon into thirds crosswise to create bite-sized strips.
  4. In a small bowl, mix brown sugar and soy sauce. Add garlic powder or cayenne pepper if desired. Set aside.
  5. Wrap each water chestnut with a bacon strip and secure with a toothpick, piercing both ends.
  6. Arrange wrapped bites seam-side down on a wire rack set over a rimmed baking sheet (or directly on a lined baking sheet).
  7. Brush each bite lightly with the brown sugar soy glaze. Reserve some glaze for midway through baking.
  8. Bake for 20 minutes.
  9. Flip each bite with tongs, brush with remaining glaze, and bake another 10-15 minutes until bacon is crisp and golden brown.
